It's definitely a bit on the short side for any given cycle through the courses (assuming you don't get taken out), about 2-3 hours or so. Between this and the punishment of failure, I had a hard time for the first hour of play until I figured out what the game actually wanted me to do, so it probably doesn't always make the best first impression (which might explain the weirdly large number of negative reviews for what is a well-polished game). Many enemies don't have guaranteed knock-back when hit, you often need to instead read enemy movements and get out of the way by making good use of the dash command of the game to avoid attacks and break out of melee combos. Something that takes some getting used to is people will likely go into the game expecting hack-and-slash combat, but the game doesn't really work like that. So the overall structure isn't entirely randomized. Each chapter has a specific theme for its environment. However, there is a set number of floors per chapter, and the same bosses will always be at the same points. If you play through the story mode more than once, you can carry over your previous character build/stats in a New Game+ style. Getting taken out is punishing even in the most casual mode, as it will send you back to the beginning of the current chapter (each chapter has several floors) and you'll lose a chunk of currency. There is also a skill tree in the menu where you can receive some upgrades by spending the in-game currency. There is also occasionally item stations in addition to the enemy drops, which you can use with the in-game currency you receive while exploring and defeating enemies. Taking the item stat change items is often a risky move if you're in a good position, as it can actually decrease your stats if you're unlucky. Enemies will occasionally drop weapons or item stat change items. You can dash, use melee attacks, and cast magic spells. All the floors are randomly generated for each play-through, including in the story mode, and you can change/upgrade/downgrade stats and weapons. It's a roguelike dungeon crawler at its core, with more action-styled combat. I doubt anything has really changed though, so here's a quick breakdown about the game. Disclaimer: I played the Switch version, but haven't picked up the Steam version yet.
